Ingredients
  

  • 1 lb ground chicken preferably lean
  • 1/4 cup breadcrumbs or almond flour for a gluten-free version
  • 1/4 cup onions finely chopped
  • 2 cloves garlic minced
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 1/2 tsp paprika
  • 1/4 tsp red pepper flakes optional for heat
  • Salt and pepper to taste
  • 1 tbsp olive oil for cooking

Instructions
 

Prepare the Sausage Mixture:

  • In a large bowl, combine ground chicken, breadcrumbs (or almond flour), chopped onions, minced garlic, sage, thyme, paprika, red pepper flakes, salt, and pepper. Mix everything together until well combined. Use your hands to ensure the spices are evenly distributed throughout the meat.

Shape the Patties:

  • Take a small handful of the mixture and shape it into a patty. Aim for about 3 inches in diameter. Repeat until all the mixture is used up.

Cook the Sausage:

  • Heat 1 tablespoon of olive oil in a skillet over medium heat. Once hot, add the patties to the skillet. Cook each patty for 4-5 minutes per side, or until golden brown and cooked through. Use a meat thermometer to check for an internal temperature of 165°F.

Serve:

  • Once the sausages are cooked, remove them from the skillet and place them on a paper towel-lined plate to drain any excess oil. Serve hot with your favorite sides or in breakfast sandwiches.
