1 Ramekins or small oven-safe dishes
1 whisk or fork for blending ingredients
1 baking dish for the water bath (to ensure even cooking)
1 kitchen torch or broiler for caramelizing the sugar
Main Ingredients
- 1 cup fresh crab meat – Opt for lump crab meat for the best texture and flavor. Fresh or high-quality canned crab works perfectly.
- 1 cup heavy cream – Provides that rich. velvety base essential to this recipe.
- 2 large egg yolks – These help bind the mixture while adding creaminess.
- ¼ cup grated Parmesan cheese – A touch of nutty salty goodness to enhance the overall flavor.
- 1 teaspoon Dijon mustard – Adds a subtle tangy depth.
- ½ teaspoon garlic powder – For a hint of aromatic warmth.
- Salt and pepper – Adjust to taste for perfect seasoning.
For the Topping
- 2 tablespoons granulated sugar – The star ingredient for achieving that caramelized crackly crust.
- Optional garnish – Fresh herbs like parsley or chives to add a pop of color and freshness.
Step 1: Whisk the Base Mixture
Step 2: Incorporate the Crab and Cheese
Step 3: Prepare the Ramekins
Divide the mixture evenly among 4 ramekins, filling them about ¾ full.
Arrange the ramekins in a deep baking dish and carefully pour the boiling water into the dish, ensuring it reaches halfway up the sides of the ramekins. This creates a water bath to prevent the custard from cracking or overcooking.
Step 4: Bake Until Creamy and Set
Place the dish in the oven and bake for 25–30 minutes, until the custard is set but still slightly wobbly in the center.
Gently take the ramekins out of the water bath and let them cool to room temperature Once cooled, transfer them to the refrigerator for at least 2 hours to let the custard firm up.
Step 5: Create the Signature Caramelized Topping
Just before serving, sprinkle a thin, even layer of granulated sugar (about ½ teaspoon per ramekin) over the top of the custard.
Use a kitchen torch to melt and caramelize the sugar, creating a golden, crackly crust. If you don’t have a torch, place the ramekins under a broiler for 1–2 minutes, watching closely to prevent burning.
Step 6: Garnish and Serve
Allow the crust to cool and harden for about a minute.
Garnish with fresh herbs like chopped chives or parsley for a touch of color and flavor.
Serve immediately and enjoy breaking through the crisp caramelized layer to uncover the creamy, savory crab filling.
