Ingredients

Basic Ingredients for Lion's Mane Mushroom Recipe:

  • 1 pound fresh lion’s mane mushrooms cleaned and cut into bite-sized pieces. Fresh mushrooms provide the best texture, but if you can’t find them fresh, dried mushrooms can work as well (just rehydrate before using).
  • 2 tbsp Olive oil: adds a rich healthy fat that complements the earthy flavor of the mushrooms.
  • 2-3 cloves Garlic minced. Garlic adds aromatic depth and enhances the flavor of the mushrooms.
  • 1/4 cup Vegetable broth: This helps to infuse the mushrooms with a savory base and keeps the dish moist while cooking.
  • Salt and pepper: To taste. These classic seasonings allow the natural flavor of the lion’s mane mushrooms to shine.

Optional Ingredients for Extra Flavor:

  • Fresh herbs: Try thyme or parsley to add a fresh herby finish.
  • Lemon juice: A squeeze of fresh lemon juice adds a bright zesty contrast to the mushrooms' earthiness.
  • Soy sauce or tamari: For a savory umami kick, consider adding a splash of soy sauce. It's a great way to enhance the dish’s flavor profile.

Instructions

Prep the mushrooms:

  • Start by gently wiping the lion’s mane mushrooms with a damp cloth or paper towel to remove any dirt. Then, slice the mushrooms into bite-sized pieces, aiming for uniformity to ensure they cook evenly.

Sauté the garlic:

  • Heat a large skillet over medium heat and add the olive oil. Once the oil is hot, add the minced garlic and sauté for 1-2 minutes, or until it becomes fragrant. Be careful not to burn the garlic, as it can become bitter.

Cook the mushrooms:

  • Add the sliced lion’s mane mushrooms to the skillet. Let them cook for 5-7 minutes, stirring occasionally. You’ll notice the mushrooms releasing their moisture and beginning to brown. This is when the magic happens, as the mushrooms develop a rich, savory flavor.

Add broth and seasonings:

  • Once the mushrooms have cooked down and browned, pour in the vegetable broth. Stir to coat the mushrooms and let the broth simmer for another 3-4 minutes, allowing the flavors to meld together. Season with salt and pepper to taste.

Finish with fresh herbs:

  • For a fresh pop of flavor, stir in some chopped fresh herbs like thyme or parsley. A squeeze of lemon juice can also brighten up the dish and balance the richness of the mushrooms.
