Ingredients
  

Salmon:

  • 1 pound cooked salmon fresh, canned, or leftover, boneless and skinless

Binding Agents:

  • 1 large egg 1/2 cup breadcrumbs (or almond flour for a gluten-free option)

Seasonings:

  • 1 teaspoon Dijon mustard 1 tablespoon lemon juice, 2 tablespoons finely chopped fresh parsley, 1/2 teaspoon salt, 1/4 teaspoon black pepper, (optional: 1/4 teaspoon paprika or cayenne for extra spice)
  • Aromatics: 1/4 cup finely chopped onion 2 cloves garlic (minced)

Oil for frying:

  • 3 tablespoons vegetable or canola oil

Instructions
 

Prepare the Salmon Mixture:

  • In a large bowl, flake the cooked salmon with a fork until it’s evenly broken up.
  • Stir in the chopped onions, minced garlic, parsley, Dijon mustard, lemon juice, salt, and black pepper. Mix well.
  • Crack the egg into the mixture, then add the breadcrumbs. Stir until everything is fully combined. If the mixture is too wet, add a bit more breadcrumbs; if too dry, add a splash of milk or water.

Shape the Patties:

  • Take a handful of the salmon mixture and shape it into a round, flat patty about 1/2 inch thick. Repeat with the remaining mixture.
  • If the mixture feels too soft, refrigerate for 30 minutes before shaping.

Cook the Patties:

  • Heat the oil in a large skillet over medium heat. When the oil is hot (but not smoking), carefully place the patties in the pan.
  • Cook for about 3-4 minutes per side, flipping gently, until golden brown and crispy.

Serve and Enjoy:

  • Transfer the cooked patties to a paper towel-lined plate to drain excess oil.
  • Serve warm with tartar sauce, a fresh salad, or alongside some crispy fries!
