Ingredients
  

Fresh Corn

  • 1 cup Fresh Corn Grilled or boiled.

Grilled Chicken

  • 2 breasts Boneless, Skinless Chicken Can substitute with rotisserie chicken.

Rice

  • 1 cup Jasmine Rice Can substitute with brown rice or quinoa.

Cheese

  • ¼ cup Cotija Cheese Feta cheese can be used as an alternative.

Cilantro

  • 1 handful Fresh Cilantro Chopped.

Lime

  • 1 unit Lime Juice for flavor.

Spices

  • to taste Chili Powder, Cumin, Garlic Powder Adjust according to taste.

Avocado

  • 1 unit Avocado Sliced or use guacamole.

Instructions
 

Cook the Rice

  • Begin by rinsing 1 cup of jasmine rice under cold water until the water runs clear. Combine the rinsed rice with 2 cups of water in a pot. Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes. Once done, fluff it with a fork and set it aside.

Prepare the Chicken

  • While the rice is cooking, season 2 chicken breasts with salt, pepper, and a sprinkle of chili powder. Heat a grill pan over medium-high heat, add olive oil, and grill the chicken for about 6-7 minutes on each side until the internal temperature reaches 165°F. Let the chicken rest before slicing it into bite-sized pieces.

Make the Street Corn Mixture

  • In a bowl, combine 1 cup of fresh corn, ¼ cup of crumbled cotija cheese, 2 tablespoons of mayonnaise, the juice of 1 lime, and chopped cilantro. Mix well and season with salt and pepper to taste.

Assemble the Bowl

  • Start with a scoop of jasmine rice at the bottom of your bowl. Layer on the sliced grilled chicken, then add a scoop of the street corn mixture on top. Optionally, add avocado slices or extra cilantro.

Garnish and Serve

  • Drizzle lime juice over the top and add hot sauce if desired. Serve immediately and enjoy!
